Family favorite salad dressing

This easy-to-make dressing keeps well for weeks in the refrigerator. It is basic and any herb, in season, can be used instead of the oregano.

Ingredients

1 cup extra virgin olive oil
1/2 cup rice wine vinegar
1 tbsp. Dijon mustard
2 1/2 tbsp. sugar
1 tsp. chopped garlic
1/4 cup finely chopped fresh oregano
1/2 tsp. pepper
Salt, to taste

Directions

Combine all ingredients except salt in a blender. Season to taste with salt.

Makes about 1 1/2 cups
