Melon salsa

Melon salsa


1 muskmelon or cantaloupe
1/2 honeydew melon
2 jalapeno chilies, remove stems, remove seeds if desired, chop finely
1/2 sweet onion, peeled and finely chopped
Juice of two limes
1 tablespoon fresh mint, chopped
1 teaspoon fresh parsley, chopped
1 teaspoon rice wine vinegar, or to taste
Salt, freshly ground pepper to taste


Combine salsa ingredients as listed above. Adjust seasonings (salt, pepper and vinegar) to taste. Cover and set aside and refrigerate if you're not going to use right away.
