Szechwan noodle salad

  • 1 cup soy sauce
    3 tbsp. hoisin sauce
    3 tbsp. sesame seeds
    3 tbsp. toasted sesame oil
    1/2 cup rice wine vinegar
    Sriracha hot chili sauce, to taste (see note)
    1 (16-oz.) package linguine noodles
    4 carrots, shredded
    1 red bell pepper, cut into 1/2-inch slices
    1 bunch green onions, chopped


In a small bowl, mix together soy sauce, hoisin sauce, sesame seeds, sesame oil, vinegar and hot sauce. Set aside.

Cook linguine according to package directions. Rinse under cool water for a few minutes, then drain well. Toss vegetables and salad dressing with noodles. Refrigerate for a few hours to let flavors develop.  

Note: Sriracha is available in the Asian foods section of many grocery stores. It is very hot, so make sure to taste as you go.
