Sea Rocket Bistro beet salad

Ingredients

  • 2 cups roasted and diced beets
    1/4 red onion, thinly sliced
    2 tbsp. red wine vinegar
    2 tbsp. Bella Vado avocado oil
    1 tsp. avocado honey (see note)
    1 tbsp. salt and pepper mix, or to taste (see note)
    1 lb. spring mix
    4 oz. goat cheese

Directions

Toss beets, onion, vinegar, avocado oil, avocado honey, salt and pepper in a bowl. Mix well. Add spring mix and toss until greens are coated. Serve individually or on a platter, sprinkled with goat cheese.

Notes: Avocado honey, which has an almost molasses-like flavor, is available in limited locations, such as online and at some farmers markets. An alternative is to use the darkest/most complex honey you can find. Because most recipes call for salt and pepper seasoning, keep a shaker filled with a mixture of both to save time. Use a ratio of 3/4 salt and 1/4 pepper.
