Toasted almond green bean sauté

  • 1 lb. green beans, stem ends trimmed
  • 2 tbsp. butter
  • Kosher salt and freshly ground black pepper, to taste
  • 1/4 cup toasted sliced almonds


Blanch beans in boiling salted water for 4 minutes; shock in ice water. Place on paper towels to dry. In a medium sauté pan, melt butter over medium to high heat. Add beans and season with salt and pepper. Sauté for 3 minutes, stirring frequently. Add almonds. Toss 1 minute. Serve warm as an accompaniment to beef or poultry. To serve as a vegan snack, substitute olive oil for butter.
