Seared prawns with mango strawberry salsa

  • 20 large prawns
  • 2 tablespoons olive oil
  • 1 teaspoon chopped garlic
  • 2 teaspoons chopped fresh herbs of your choice
  • 1 ripe mango, diced
  • 1/2 pint strawberries, diced
  • 1/2 jalapeno pepper, seeded & diced
  • 2 tablespoons minced red onion
  • 2 tablespoons minced cilantro
  • 1 teaspoon fresh squeezed lime juice


Marinate shrimp, which have been peeled & deveined, in olive oil, garlic and fresh herbs (at least 1 hour).

To prepare salsa, combine all remaining ingredients; mix well and set aside.

Grill prawns till cooked, approximately 3 to 4 minutes (don't overcook) and reserve.

Arrange prawns on a plate and top with your Strawberry Mango Salsa.
