Summer tomato salad

  • 2 ripe tomatoes (sliced)
  • 1 tbsp. balsamic vinegar
  • 1 cup olive oil
  • 6 to 8 slices of smoked mozzarella cheese
  • ½ small red onion finely diced
  • Salt and pepper
  • Fresh basil


On a platter, layer the cheese, tomatoes and onion in any order you wish. Dash with salt and pepper. In a bowl, mix olive oil and balsamic vinegar. Drizzle over the salad. Finely slice fresh basil, add to salad and enjoy.

Serves 4.
