Mia's berry and nectarine compote

Ingredients

  • 1 tsp. arrowroot or cornstarch
    1 to 2 tbsp. orange juice (see tip)
    2 ripe nectarines (see tip)
    1 cup (or more) fresh berries (or thawed if frozen), such as blackberries, raspberries, blueberries or a combination
    Ground cinnamon

Directions

Dissolve arrowroot in orange juice in the bottom of a saucepan (do this before heating the pan). Rinse nectarines, pat dry and dice. Add nectarines and berries to pan and then heat just until boiling, so that mixture will thicken. Stir in cinnamon. Serve atop waffles or pancakes or stir into oatmeal or other hot cereal. Compote will stay fresh in the refrigerator for several days or in the freezer for several months.
 
The Nutrition Professor's Shop Smart/Cook Smart Tips:

  • If you would like to have orange juice available any time (for a recipe), keep a container of frozen orange juice concentrate (no other ingredients, just juice) in your freezer. I found one with a screw top that is perfect! Just remember the 3-to-1 water-to-concentrate ratio. For example, if you need 1/4 cup (4 tbsp.) juice, mix 1 tbsp. concentrate with 3 tbsp. water.
  • Choose a "freestone" variety of nectarine, so the pit can be removed easily.
