Mixed green salad with cherries, feta cheese and levain croutons

  • 3 tbsp. cherry juice
  • 1 tbsp. lime juice
  • Large pinch of salt
  • Large pinch of pepper
  • 1/4 cup canola oil
  • 1 1/2 bags washed lettuce
  • 24 cherries, stemmed and pitted
  • 1/4 cup crumbled feta cheese
  • 8 thin slices of levain bread, toasted (see note)


Lightly whisk together cherry juice, lime juice, salt and pepper. Slowly add oil and whisk until combined. Place lettuce in a bowl. Pour dressing over and toss until evenly mixed. Place salad on 4 plates. Sprinkle cherries and feta cheese around salads. Place 2 levain croutons on top of each salad. Serve immediately.

Note: Levain bread is a country-style bread with a firmer texture, available at bakeries and specialty grocers.
