Kohlrabi and carrot salad

Ingredients

  • 4 medium-sized kohlrabi, peeled and shredded (makes 4 cups)
  • 2 medium carrots, shredded
  • 1 Asian pear, shredded
  • 1/2 each yellow pepper and medium red onion, cut into small strips
  • Andy's Dressing
  • 1/4 cup mayonnaise
  • 1/4 cup olive oil
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon grated fresh ginger
  • 2 teaspoons rice wine vinegar
  • Juice of 1/2 lime
  • Salt and pepper to taste

Directions

Simply mix all the ingredients for the dressing and set aside. Mix all the vegetables together, add dressing and enjoy.

Serves 4
