Timaree Hagenburger is a registered dietitian with a master's degree in public health and is a nutrition professor at Cosumnes River College in Sacramento. She's also a food lover who likes to share tips and tricks on how to enjoy fresh California fruits and vegetables. This week's segment revolves around beets.

Beets are low in calories, high in fiber and provide several B vitamins, along with carotenoids and vitamin A, vitamin C, iron, manganese, copper, potassium and magnesium. Because raw beets offer vitamin C and folate (both susceptible to cooking losses), you can boost the nutrition profile of your salad by adding grated raw peeled beet and/or chopped tender beet greens.
