Timaree Hagenburger is a registered dietitian with a master's degree in public health. She is also a nutrition professor at Cosumnes River College in Sacramento and a food lover who likes sharing tips and tricks on how to enjoy fresh California fruits and vegetables—such as purple potatoes.

Timaree says the rule of thumb with fruits and vegetables is that the deeper and richer the color, the more nutritious the content tends to be. The purple potato is no exception. It is rich in anthocyanin, the antioxidant that is characteristic of deeply colored blue or purple produce. This compound is from the powerful flavonoid family of antioxidants and is found in other nutritional powerhouses such as blueberries and pomegranates. It is most well-known for its immunity-boosting and cancer-fighting properties.
